In an attempt to bring this back to the original question, at least as I understand it, I agree that there seems to be a fairly narrowly defined canon of what is "hot": either heavily shaped carbon fiber, usually black, with lots of logos and aero wheels; or very clean, minimalist steel or titanium builds.
The responses so far seem to indicate that most of us are old enough to be opinionated, and not be too swayed by what other folks consider "right." I think I'm probably like a lot of others on the 50+ forum in that I have a pretty good idea of what works for me. Sure, I want my bikes to look good, but comfort (geometry and tubing), gear ratios and budget come first.

Oh, and I like bright 1990's paint jobs a helluva lot better than flat black.

Part of this is following the crowd. Part of it is that bikes have been around long enough that the basic designs have prety much settled in. The changes that happen are subtle and may escape the casual observer.
Bike geeks will see huge differences between bikes that many will think look just alike. The differences are easier to spot with MTBs than with road bikes, but it's not to hard to see the difference between normal steel tubing and oversized aluminum tubing or shaped carbon tubing. Sharper eyes will notice wheel variations and the number of rear cogs and chainrings and internal vs external cable routing. Real bike nuts can quickly spot different component brands, tire sizes and geometry variations.
Bike porn, like other kinds of beauty is in the eye of the beholder.
