Surprisingly nothing affects the fold. The seat gets angled so no worries there. The only thing I have to do is take the coffee thermos out.

The handlebars rotate forward anyway so the coffee cup holder is sticking straight up.

Bike folds just like when it's stock albeit a little heavier depending on what's in the rack bag.

Next you need to figure out how to fold the bike without spilling the coffee.

They are the SKS fenders from the Dahon web site. They fit just fine on the Big Apples.
