I've been thinking a lot about this lately too. I even e-mailed the company that makes power grips to see if they had done any internal testing with folding pedals. Sadly, they have not. Here's the response I got from them which does hint at the possibility that it might work...

Honestly, we haven't had much experience with folding pedals, but it looks like they should work as long as they have standard reflector mounting holes. You'll just want to make sure they're not angled or recessed in any way as this decreases the efficiency of the design.

Power Grips

I have a Dahon MU P8. It came with plastic folding pedals. I was able to mount standard Power Grips using self tapping screws. They work just fine.
Try it.
