Odd that he had a helmet. Maybe he was trolling for unlocked bikes? Or had a beater and decided to upgrade?

It's a cycle cafe, https://www.lookmumnohands.com/ so he was either cycling there, or more liking came in cyclist drag with the intention of looking inconspicuous while stealing a bike.
I feel sorry for the owner, but with an estimated 80,000 cycles stolen in London each year, why would anyone leave a valuable cycle unattended in Old Street? Hint, not the most salubrious part of London. Hint 2, bikes are also stolen in the salubrious parts of London.
(my partner picked up one of these for just such circumstances. Small, light but enough to feel secure in leaving your bike while you order a coffee)

After watching the video, my impression, like jefmcg's, was that this person was dressed to blend in. Pretty smart if you ask me. You tube is full of videos of people brazenly stealing bikes and no one pays attention. Add a helmet and trouser clip into the mix of the thief's wardrobe and he's golden.

I think this is how it worked - one was the spotter (scout) and the other the actual "thief" outfitted to look like an average bike rider. This two person system raises far less suspicion than one person handling both functions.
