I have a friend of mine's dad who is a big bow hunter and he always has ton of venisson and he makes batches of pepper venisson jerkey thats amazing

oh and if I ever buy beef jerkey the only stuff I get is the pemmican premium stuff. Thats the only product taht doesnt give me a headache have that nasty jerky aftertaste that most bagged stuff gets.

Yep Bear is fantastic meat. Even bear steak can be good (it's a bit firmer than most meats, but nice if cooked medium rare).

I used to make bear "jerky" as a kid (8 years old) using the toaster oven (parent supervision) on it's lowest setting, some salt, and some fresh ground black pepper. It wasn't smoked, but it was still pretty tasty.
