    Steak tartar! I really need to know the quality of the meat AND the butchers cleanliness standards though before I prepare it! (I also like "Cannibal Sandwiches".....Steak Tartar on an onion roll with horseradish!)

    Belly pork - slow roasted for about 3 hours on a bed of onions, yum!

    Filet mignon - cooked just this side of screaming ie. seared on the outside, warm in the middle.
