Water, bring lots and lots of water, the air is really dry there. Here's a tip since its about 110 degrees there, take a cotton shirt, soak it in water, wring dry, and put it on, it'll keep you cool for about half an hour.
I went there for 4 days last month and it was awesome. We stayed at the monte carlo and spent about 3-4 hrs a day by the pool catching sun, if you're only there for a weekend, I suggest you skip that. The water show at the bellagio's much better at night. If you can, splurge a little and go out to a nice dinner at Olives at the bellagio (it's on the right side of the hotel complex). You'll need relatively nice clothes and a reservation but if you're willing to wait when you get there, you can get outdoor balcony seating right next to the water show.
Treasure island is cool but make sure you check with the locals about wind conditions first. If winds blow over 20mph or something, they cancel the show for the night (wasting you valuable waiting time). The volcano at the mirage is cool, if you really want a show, go around to the back of the volcano where the entrance to the hotel is, it puts you almost right next to the flames when they go off and you will get TOASTED!
Venice and paris is pretty cool on the inside, I'd go out of my way just to see it. The gondola rides are a rip though. The other hotels are ok, a lot of shopping but not really showy like venice and paris. New york new york is ok on the inside since I already live here but if you've never been, check it out. They have a pretty fun and tame roller coaster if you want to get your gf on it. The best time to go is late at night at like 11pm when there's no line and it's cool. You can make multiple trips on it by either buying an unlimited ride pass or going through the express line and telling them you're doing a reride. My gf and I did that one night and it was awesome.
Food wise, the buffet at cesar's palace is a joke, the best value's at the monte carlo. If you like sea food, the paris buffet is pretty good too.
Take a cab down to the stratosphere tower, they have 3 really nice rides on top at like 900ft, including one that shoots you up to something like 1100ft with 4G's of force, the view from up there is worth the trip. There's no line and very few people on the ride and it's easy to sneak a camera pass the operator to take with you onto the ride. Just make sure you hold on tight and snap a few shots when you get up there.
