For example, served hot might be a moment of passion act of anger and frustration. Such as shooting your wife and her lover when you find them in bed together. Apparently, this is legal in Texas, can anyone confirm?
Revenge served warm/tepid could be a more prolonged revenge. Such as pretending to be friends with someone and extracting information for which you can use to hang them, such as getting them fired or thrown in jail.

I take it the temperatures has to do with your feelings in the moment? If you're not feeling anything for them, no anger, no bitterness, no resentment but you do it anyway, is that revenge served cold?
