Lima beans rock. Butter beans do too, but limas, especially baby limas, are tastier. BTW, dried limas make an awesome variant on Senate bean soup. And, you can't find a much better legume source of soluble fiber. Know what I'm talkin' about?

There is a frijole called Christmas Lima Bean - I have no idea what it is with it, I am sure it is supposed to be a novelty but it grows wonderfully down here. Incredibly well, I fear it might actually take over the forest or something. That and black eyed peas. Wonderful.

Yeah, I like Lima Beans.

I always wondered how that was done.

Fortunately, I get mine before they are trained to do that. I used to hate them, but I realized that was because they use only the worst lima beans in those cans of mixed vegetables. When they're in soup... mui bueno.
