Cheap lunches

Ok...so a few months ago, I started trying to eat lunches on the cheap. I mean real cheap, like bean soup cheap. 4 lunches for $2.00 cheap.
Want to try branching out.
What are some other really cheap lunches that are pretty tasty and how much does it cost (estimate).

Adult version of a box of Kraft Mac & cheese

reduce milk, add in dijon mustard (ya want that nice bite) and be liberal with the cayanne pepper. It's pretty good. Not real healthy - but you can get a few portions out of that box!

PB&J sammich. It's pretty inexensive. Throw in a tube of Gogurt and maybe a banana and some almonds and i'm good for lunch.

What's wrong with a peanut butter & Jelly sandwich on whole wheat bread and some carrots or an apple. That has got to be under 50 cents per meal. Splurge and use nutella instead of jelly (or in addition to raspberry jam).

Or cheap lunch could be as simple as foraging for lunch via the company fridge. We seem to have a "grazer" in our midst lately.

SO to be a successful "grazer", you must go undetected - otherwise you may run the risk of enjoying a couple of "set-up" food items in the fridge that may not be quite right.

Heres what I buy in a week:
2 heads lettuce - $4
cucumber - .50
yogurt - $4
various fruits - $6
box granola bars - $2
eggs (to hard boil) $1

divide it up, you've got lunch for a week.. salad with cucumber, hard-boiled eggs, yogurt, some fruit, and a granola bar. Probably a little spendy compared to your usual budget, but ends up being around $2/day.

+1 on rice & beans, though. below is a great, super-healty recipe, it makes A lot. About 5 meals for me. Thow out the chicken and substitute a side of beans for cheap-ness.

Here's what you need...

* 3 cups hot cooked rice (cooked as directed on the package, omitting margarine and salt)
* 3/4 cup water
* 1 tablespoon soy sauce
* 1 tablespoon cornstarch
* Ĺ teaspoon crushed red pepper flakes
* 1 teaspoon oil
* ľ cup chopped onion
* 1 medium green bell pepper, cut into thin strips
* 2 tablespoons water
* 2 zucchini, halved lengthwise, thinly sliced
* 2 chicken breasts, baked and cut into cubes
* 3 tomatoes cut into thin wedges.


* While rice is cooking, in small bow, combine 1 cup water, soy sauce, cornstarch and red pepper flakes; blend well. Set aside.
* Heat oil in large nonstick skillet or wok over medium heat until hot. Add onion and bell pepper; cook 3 to 4 minutes or until onion is tender. Add 2 tablespoons water and zucchini; cover and cook until all vegetables are tender.
* Add chicken and tomatoes; cook until thoroughly heated. Stir cornstarch mixture; added to skillet. Cook and stir until thickened. Serve over rice.

Nutritional Analysis: One serving equals: 380 calories, 10g fat, 54g carbohydrate, 6g fiber, and 13g protein

just trying to be frugal. We'll call it practice. I'm hoping to go back to school and pursue an entirely different career in a year or two, and if I do that, I'm gonna be living cheap as hell for a few years.

Make it with one pound of ground beef, one pound of pasta, a couple cans of stewed tomatos and a couple cans of dark red kidney beans. some would say it actually tastes better after its been put in the fridge for a day or two and then reheated. might be a good idea to cut the recipe in half, but i can handle eating it for lunch/dinner for a few days. add cheese (shredded or parmesan/romano)

thats fair. yeah, a lot of people warned me if i didn't go to grad school right after undergrad, I'd probably enjoy not being poor too much, and it would be hard to go back.
