That's the wiki explanation.

When one makes an object out of composite materials, one of the ways to remove excess resin and air from the "composite matrix" (carbon fiber mixed with resin in the case of this bike) is to place the bike in a bag and vacuum the air out until the resin dries.

Without air in the bag equal pressure (about 15 pound per inch at sea level) is placed on all surfaces of the bike.

It is a form fitting clamp, basically.
