    any foosters have bomb carnitas and/or chicken recipes???

    I have 2 chicken half breasts, a pork shoulder that is going to get cut down into ribs.

    I want to make carnitas, and I was taught the boiling then pan fry method but completely forgot. What ingredients do I need to put into the pot, and if the pieces aren't too big how long will the boil need to go for?

    Also, chicken half breasts. Should I smoke them? How? Will they dry out you think?

    I'd go slow and low in the oven with the whole shoulder. Covered tightly with your choice rub/spices. You can cut it into smaller pieces if you don't have a lot of time. Then I like to pull the shoulder and pan fry it in it's own fat (from oven pan) until crispy but not dried out.

    I like to use smoked chicken breasts for sandwich meat... using fruitwood with a real light smoke. You're making me hungry now.
