I made cupcakes! (and I took pictures)

I am a terrible baker. I can make cookies, I can bake bread, but I cannot make cakes or pies.

But I decided to give it another whirl today.

I made Golden Vanilla vegan cupcakes from a drool worthy book called "Vegan Cupcakes Take Over the World" by Isa Chandra Moskowitz.

My DH took a bite out of one:


They turned out pretty tasty. I was a little alarmed at how deep the golden colour is in these cupcakes, but then I re-read the instructions and realised I made them with margarine instead of canola oil. Hence the deeper golden colour. I think I'll try them next time with canola oil. I'm also going to get larger cupcake liners. These ones are overstuffed.

But considering how horrible my last bundt cake was, these cupcakes are a HUGE improvement!

Baking bread is difficult! If you bake cookies perfect from scratch you are not a terrible baker! I've never baked cake or pie myself. Those cupcakes look delicious, next time make some icing from scratch!

Um. Wow. Ya know, if you place those carbon cupcakes under extreme temperature for several million years (probably more, but for example sake, let's be optimistic and leave it at millions of years), and then hurl them out of volcano, you'll have diamonds.
