Technically, Jimi Hendrix's All Along The Watchtower (Bob Dylan) and Aretha Franklin's Respect (Otis Redding) are covers, although they are better known than the originals.

As to the original question, the Beatles' cover of Chuck Berry's Roll Over Beethoven absolutely rawks.

George's lead guitar is tight and clear, John's lead vocals are just raggedy enough, and Ringo's drum drives the group. Oh yeah, Paul plays bass and sings backup.
