    It is indeed a pain to make. Almost as good is to just get a jar of the mole paste and dilute it with 4 parts chicken broth to one part mole.

    We have a restaurant in Santa Fe that makes killer plantain mole enchiladas. I've made a pretty good replica of it at home. The hardest part is waiting upwards of 2 weeks for the green plantains you get from the store to turn nice and black. MMmmm good stuff.
