today's lunch: homemade spring rolls

amazing what one can do with $5 worth of shrimp, some fish sauce, rice vinegar, peanut butter, green leaf lettuce, carrot, rice sticks, and cilantro - yum!:

Where's the Panang curry? or the drunken noodles?

Here's my all-vegetarian recipe:

- rice paper
- spinach
- fresh pineapple cut into strips
- sprouts
- italian basil
- thai basil
- peppermint
- vietnamese mint (the purple/green ones)
- cilantro

- 1 clove garlic
- red curry paste
- fish sauce (nuoc mam)
- old-fashioned peanut butter
- sugar

PEANUT SAUCE

Measure 1/16th cup fish-sauce, add to 1/3rd cup water. Add 1 teaspoon curry-paste, 3 teaspoons sugar and 1 minced garlic clove. Add 4-5 tablespoons peanut-butter. Mix well until smooth

SPRING ROLLS

Wet both sides rice-paper, hold vertical for 5-seconds to drain. Set on edge of bowl to soften (45-60 seconds, do two to stagger the time). Lay out rice-paper and add vegetables and roll it all up. Eat with plenty of peanut-sauce slathered on.

I made some this weekend. What a coincidence.

I buy the thin sliced chicken breast and then slice into strips and marinate. This time it was Sriracha's garlic chili sauce, organic honey (I like it because it doesn't crystalize in the container), and soy sauce.

Cooked those in a skillet with a little peanut oil then rolled them into rice paper with Chinese cabbage, bean sprouts, scrambled egg, and basil with some satay sauce on the side. It was f'ing phenomenal.

I did make the mistake of making one loaded with the garlic chili sauce in the wrap. That had me drinking a little milk.
