Posessive -- the new plural

Why do so many people use apostrophe-s to indicate plural instead of just the letter s? For example:

My LBS has a good selection of Trek's.

Have the rules of grammar changed lately? Is grammar still taught in schools?

I think it's people trying to be smart but are actually incorrect, like when people say "...and I" for instances when it should actually be "...and me."

Also, there used to be rules about ['s] after an acronym (e.g. CD's) although I think that is changing quickly (e.g. CDs), so maybe it stemmed from ['s] after an acronym to ['s] after a noun, especially a proper noun?

Language is constantly evolving. It may some day come to mean it. In the mean time I'm going to continue not proof reading anything. I get off thinking that some body is out there reading my post and thinking "What an ass apostophing everything. I try to write out "its" when using a plural for some things and the "smartness" in my ipod touch always changes it to "it's".
