Quesadillas. Spinach quesadillas to be exact.
I dont like the Canadian cheese much at all. Nothing up here compares to tillamook, nothing that I have had. I love that crumbly mexican cheese, queso anejo enchilado or something like that.

"harder" is not a very good safeword.
Jarlsburg, smoked cheddar, port wine, edam, gouda...you name it. I love all cheeses except the blue varieties. But my favorite cheese of all is....drum roll, please....
That warning out of the way, someone mentioned being lactose intolerant: Boar's Head makes a lactose free baby swiss.
Some of my favourites are
Fol Epi - a Jarlsberg-ish cheese with a nutty flavour from the wheat rind
Chimay Poteaupre- a very soft, heavily ripened beer washed cheese
Sotocenere - a semi soft ash rind cheese with black truffle

I know, low class, but it makes the best grilled cheese sandwiches.

Gorgonzola. But really if it's cheese and it smells like armpits or feet I love it. Unless it's just been rubbed on feet or armpits. That's gross.
I loves a good French double cream brie
I also love the blue cheeses made in Medford Oregon by the Rogue Creamery, out of this world http://www.roguecreamery.com/group.asp?grp=32

Ridiculously sharp white Vermont cheddars
Land o' Lakes white american - all other American cheeses suck.
I don't eat cheese because I like having high energy and a low risk of colon cancer.
