I dont like the Canadian cheese much at all. Nothing up here compares to tillamook, nothing that I have had. I love that crumbly mexican cheese, queso anejo enchilado or something like that.

That warning out of the way, someone mentioned being lactose intolerant: Boar's Head makes a lactose free baby swiss.

Some of my favourites are
Fol Epi - a Jarlsberg-ish cheese with a nutty flavour from the wheat rind
Chimay Poteaupre- a very soft, heavily ripened beer washed cheese
Sotocenere - a semi soft ash rind cheese with black truffle
