You need to watch the movie Food, Inc. or talk to one of the USDA inspectors about the three winged hormone fed chickens they find from time to time. Or go visit one of those Tyson chicken farms every morning when they collect the dead ones. Then, you might eat an egg white from time to time.

I eat only locally raised, hormone free chicken. I know the people that raise them. Same thing for my eggs, and by the way, my cholesterol is absolutely perfect and my coronary arteries are wide open and the size of LA Water Mains. No plaque, whatsoever. My heart issue is a congenital one that involves irregularity of activity in the S-A Node.

Good, only way to go. Same here. I've a farmer out on the end of my 25 mile ride where, about once a week, I pick up four eggs and nurse them home in my expanded seat pack.

No apology necessary. I wasn't offended at all. Actually, I'm usually pretty glad when someone cares enough to make a suggestion. Text just doesn't convey emotion very well, and I'm one that tends to very formal writing, in style, so it can be hard to tell. I also tend to try to cover a topic thoroughly. (Go figure........I'm a Philosophy/Psychology geek)

I know my eggs come from somewhere nearby, since they're usually covered in feathers, dirt and bird poo. But I don't ask too many questions because I know I won't like the answer.

Nummmmmm! Grilled wild salmon is the only thing better than grilled chicken. Which means this looks like heaven !!!


Try this:

whole local (preferably organic) chicken, rinsed and dried completely (inside and out). Very dry is very important! Then truss and sprinkle/spread 1T of kosher salt inside the cavity, another 1T (or so) on the outside of the bird. No oil. None. Nada.

Bake at 450F until done. Incredible. I like to do it on my grill (propane); if you can, use one side of the grill (i.e., 1 burner) as the heat source, and put the bird on the other side of grill (and not over the flame). Roast/grill until done...amount of time depends on the size of the bird. Make sure to use the carcass for soup stock!

Sounds like the turkey I smoked a few weeks ago.



and a slideshow of a lot of the stuff I've smoked or BBQ'd this Summer, from Balinese Pork to the turkey.



I prefer charcoal or wood, though, over propane anyday. It gives it that special flavor you just don't get with gas.
