Wanted: Vegetarian Recipes
 
One of my New Year's resolutions was to eat more vegetarian meals. I made a great batch of veggie chili today, but I'm looking for additional recipes.

I have a pasta machine so that opens a lot of possibilities, but I only have a few recipes.

Anyone have any good recipes to share? I'd like stuff to take to work for lunch - right now my veggie lunch options are PB&J.

+1 or just leave out the meat.

I* make a pretty tasty corn and black bean dish with Mexican seasonings that goes awesome in a tortilla, on a salad, over potatoes or just plain. We also enjoy red peppers stuffed with various veggies and mozzarella cheese. Any Mediterranean or Indian dish...we love Bombay aloo and falafel and hummus. Epicurious has some great recipes, as well as allrecipes.com.

you might want to try egg plant mapo tofu.
not 100% meat free, but it doesn't use much.

You could substitute vegetarians for any dish that required pork.

palak paneer, which is mainly made of spinach and paneer cheese.

Lots of indian food is vegetarian.
But don't blame me if you start smelling like your food after a while. :p

I just cooked my first spaghetti squash today. Came out pretty good. I realize that this would be like substituting vegetable for pasta, but hey...it's vegetarian.

Bean sandwiches...

ciabatta bread cut in half, toasted
smear with (preferably fresh) [vegetarian] refried beans
top with a little salsa and cheese
if you'r feeling crazy a little sour cream and hot sauce will crank it to 11.
Eat them open face with a nice beer.

This sounds pretty good as a lunch option. My workplace would frown on the beer, though.

I have to admit I was a bit leery about making it, but I added extra tomatoes and beans and kicked up the spices and I didn't miss the meat at all.

I just spit a whole mouthful of vegetarian chops on my monitor. glad I wasn't eating real pork.

Go to a Mexican grocery and get some large crispy tortillas - tostada type. About 4-5 inches across.
Get a can of refried beans, add a little water or olive oil until it's easy to spread.
Get a can of enchilada sauce, or any sauce/salsa you may like.
Get some shredded cheese. Whatever you like.
Spread a dollop of the beans on the crispy tortilla, put a spoon of sauce on top of that.
sprinkle with a bunch of cheese.

Eat like that or toast/microwave to get the cheese to melt. if desired.

Also good with lettuce, chipotles, whatever you lik on top.

Also snacks...

Currently I've been munching on walnuts mixed with raisins. That's a great combo. And stores are still well stocked with walnuts from the holidays.

Tonight's dinner:

Pesto sauce, sliced red peppers and sliced avocado sprinkled with mozzarella cheese on top of a crescent roll crust. Baked for 13 minutes. It was awesome! Am thinking of adding sliced red onions and a more flavorful cheese next time.

My Favorite Vegetable Noodle Stir Fry

You need:
A bag of dry egg noodles.

Chopped veggies. You can dice if you want but I like big pieces of veggies or you can buy frozen bagged vegetables. Cabbage, onions, red bell peppers, diced carrots and cauliflower chunks are great.

Fresh minced garlic or you can get the minced stuff in a jar from the store if you must.

Your stir-fry sauce. I make mine with a tablespoon of brown sugar, a tablespoon of soysauce, half a tablespoon of sesame oil, half a tablespoon of sirrachi sauce (optional) and 1/4 cup of any broth. **Make your sauce and chop/ dice your veggies before you start any cooking**

Boil your noodles, the amount you want, pour noodles in a drain pan and place in sink. Do not rinse noodles. Pour in a little soy sauce and sesame oil and toss the noodles. The sesame oil will keep the noodles from sticking. You can use olive oil if you don't like sesame oil.

This part goes really fast. This next part shouldn't take more than a minute and a half.
Get your pan ( I use a wok) and get it hot using high heat. Pour a little bit of cooking oil, I use vegetable oil.

Toss in your garlic and cook briskly. Toss in your veggies and stir fry briefly. Pour in your strifry sauce and briskly mix. Your mission is to get the veggies hot but not mushy so just flash-fry for a few seconds really.

Throw in your noodles that have been draining into the pan or wok and stir everything together for a few seconds. Too long and the noodles will start to stick to the pan!

Place in a serving dish and enjoy!

PS: I'm not vegetarian so I'll drain and toss a can of tuna at the end but the veggies by themselves are great.

We eat a lot of beans and rice; make brown rice w/ chicken stock instead of water (oops I guess that's not veggie), and pop a drained can of beans into a frying pan to simmer. Add a drained can of tomators and/or corn, anything else. If it was just me and not my NO ONION family I would chop up an onion and saute it in the pan before adding the rest.

We actually don't do vegetarian, we would fry up some bacon or ham in the pan first and then add beans but you know...

You should have an Indian market in your area. They usually have a nice selection of simmer sauces in a jar (try Tiki Masala), these are so good and make for a quick and delicious meal. Cut up lots of veggies, add garbonzo beans and heat in a bit of oil to soften a bit. Add the sauce and some tofu and heat until the veggies are soft. Put this over brown or basmati rice and you have a great meal with leftovers for lunch the next day. Don't forget the naan at the Indian market to go with the meal.
