Yesterday gave me nice weather, so I decided to break out the smoker.
Take one boneless Turkey, smoked with Hickory. Here, it's prepped for the slicer in manageable sections, and will either be dinner slabs or shaved. There's at least 9 meals there, though. Thus took 11 1/2 hours to smoke.
And the Pastrami, all sliced, and ready to pack.
There's 17 pounds of delicious, smoky goodness!
