I'm smoking some Corned Beef, and we're having boiled cabbage and Yukon Gold taters tonight with the corned beef. :D

The corned beef is almost ready, same with the cabbage (which also has some Walla Walla sweet onion cooked in), and the potatoes. Afine Irish meal!

My lovely wife made pot roast with potatoes, carrots and onions. It was delicious. :D

I'll eat whatever looks good on the menu. No special celebration of the day here, especially since I gave up alcohol for lent. It's been a good experience, but I can't wait for Easter.

Smoking a pork loin for dinner tonight. I've been trying to get it on the grill for the past couple of days. Today, I finally had time to do it.
I have the corned beef, I'll just have to make the time next week to smoke it.

Oh, and rice and spicy asparagus. I'll do the cabbage and tatters when I smoke the beef.

Stuffed a corned beef point vs brisket into my freezer for when Couch comes to visit in a couple weeks. Had some very yummy corn and lobster chowder with a salad for supper. Can't wait for the corned beef!!

I'm not terribly fond of corned beef and I gave up meat for Lent, so I'm having homemade Chicago-style deep dish veggie pizza with a side salad and a nice cabernet to go with it. :)

Chicken Ceaser sandwich with a bowl of Nacho soup. Washed it down with a mango frosty drizzled with rasberry sauce and topped with whipped creme. Mmmmmmmmm!

Went "traditional" with a corned beef cooked in stout with soda bread on the side. Yummy, yummy comfort food.

So Tom, what did you end up smoking with? Curious what wood is optimal as I've never smoked a corned beef.
