Pastrami, and Smoke Dried Tomatoes, today!

My flat cut of brisket was finally done curing today, and Pastrami and Smoke Dried Tomatoes are in the smoker. I'll post the pics with the tomatoes in later, I just put them in, but here's the progress on the Pastrami part.

I just did a few racks of spare ribs. Then glazed half(top)

If I announced a public BBQ, how many do you think would show?

I'm actually considering opening up- a smokehouse restaurant/deli, by the way.

There are two very successful barbecue places in the Boston area. (Yes! Real Barbecue in the Boston area!) They are

The Blue Ribbon Barbecue and Red Bones

Both places are legendary in their own right. I find the southern green beans and collard greens at the Blue Ribbon to be

I have a neighbor who is ALWAYS Q'ing. I keep meaning to suggest he opens a bbq joint. One neighbor makes deer sausage that is very good. He smokes meat but only does large amounts, not single meals.
