    Super Quick and Easy Cucumber Salad Recipe

    2 Vidalia Onions, sliced thin
    2 peeled cucumbers, sliced thin
    12 oz Thousand Island Dressing

    Combine all in a 1 gallon ziplock bag, mix thoroughly, and chill at least 2 hrs before dinner.

    Vidalias are so sweet you can eat 'em like an apple.

    I know...they're just down the road from here....well, ok, 4 hours drive.
    They make awesome onion rings....especially if you add some jalepenos to the batter.

    This is a salad I can eat without messing up my warfarin dosage. It's low in Vitamin K.

    Although I love Vidalias, I prefer sweet red Italian or Bermuda onions thinly sliced with a few thinly sliced shallots to offset the single-dimensional onion flavor, and then I often add thinly sliced hicuma marinaded in ponsu or thinned hoisin sauce for an asian flavor, or white truffle oil a dot of balsalmic vinegar and some finely diced fresh basil for a more european taste.....

    I've actually got 40-50 different cucumber salad recipies that I use to accent various BBQ and stovetop meals, and there is seldom any leftovers. Hicuma is an often overlooked but very complimentary addition to any vegetable salad, and of cource avocado goes well with anything green or otherwise.

    I too stuggle with what I can eat due to my coumadin dosage (8mg/day), and after 25 years of taking it I still lament limiting my intake of broccoli, brussel sproats, asparagus, avocado, grapes, etc., but I am still alive because of it. Who would think that rat poison (coumadin) and snake venom (heparin) would be what allowed me to live a "normal" life. Be safe, eat well.

    I would have thought some sort of vinaigrette, though, rather than thousand island.

    I've used Vinaigrette, too. I just wanted something different. I've also used sweet and sour, and French.
