Anyone else here LOVE smoking?

I do... going to smoke my first corned beef brisket for the upcoming holiday. I've smoked fish, chicken, turkey... but this will be my first try at corned beef. Any suggestions?

Tom is our smoker around here. PM him. Too much work for me, but I do enjoy a nice piece of smoked meat. My brother is the smoker in our family.

smoke food all the time on my new weber kettle with the gas ignition. just smoked a pork roast for my daughter-in-laws twin brother, who was visiting. we ate like kings. so are you going to smoke a brisket or smoke corned beef?

I've got the brisket soaking in the brine right now. I've always done the "traditional" boiled corned beef, I thought I would try something different.

Nice! I like your setup better, that way you don't have to worry about rotating your meat. The side closest to the smoker box on mine always is hotter.

And it's dirt cheap if you already own a Smokey Joe, the pot fits right into the lip of the base, and the lid fits perfectly on top too, just some simple sheet metal cuts and a couple cheapy items and you have a full fledged smoker!

I hot smoke fish occasionally on the BBQ. It's a simply awful setup, but it seems to work.
