If it tastes good, or is fun to catch, they place a limit of some type on it. Size limits, etc, down here are weird and arbitrary, and subject to change on short notice. It's so FWC can ticket tourists down fishing, etc.

Well, let's see

8 track player, 500 8 tracks.
I have ny first 3 computers there:

An Altair 8800
A TRS 80
COMMODORE 64

An IBM Tape Drive I used to use for programming on the Altair that I salvaged and repaired when Magnavox upgraded their system in 75.......

My stuff is too old for goodwill.

By the way, back to the original topic.....

I'm a little concerned about my turtle etufee.......I'm getting attached to the turtles! I've had to stop myself from naming them 3 times already. If I name them, I can't eat them!

Yeah Ive never had turtle either but I have tried a few other non fish creatures that live in "fresh" water and most taste like swamp water.....yes, Ive tasted swamp water.....don't ask.

Turtle meat has to be prepped properly, but it's spectacular when it is. The trick is to keep the turtles in a clean warte3r environment for a week, fasting, to purify the meat and clean out the GI tract. Today is prep day and tomorrow, we make this:

I uploaded the recipe in a word file as well as a jpeg, for convenience of printing if anyone wants to try the recipe out, as well.

im npt picky but some reason turtle meat freaks me out .maybe its reptile meat but i have gator before and liked it

Well 1 turtle down, 1 to go. This better be some really really really good meat considering how much of a pain it is to clean them. I will say so far it looks very good and it does not smell fishy. This is a good sign of the turtles eating a very clean diet.

I just wish in Florida you can keep snapping turtles because they have a really really good meat and they have a tenderloin up along their shell as.a back strap. That is truly turtle prime rib.

Where I live on the marshes outside of Savannah there were, until the late '60s, active turtle farms. Probably farmed Diamondback Terrapins or Marsh turtles. Turtle soup used to be a fancy delicacy.

They are indeed a pain to clean. I've done one in my life. Some folks stick an airhose under their skin then blow them up like a balloon to separate the skin from the meat.
I'll just stick with catfish and buffalo.

And the ettoufee just went in the oven at degrees in a dutch oven at . The turtles produced the most glorious white meat, that I marinated overnight in an Adobo and lemon juice marinade with a little soy sauce and Thai fish sauce instead of Worcestershire....it gives a smiilar but sweeter flavor to W sauce.

Check put this white meat!

And here's the ettoufee in the dutch oven. I'm using an iron plate in the oven under the dutch oven to help hold the temp stable in the oven.

Well my Ettouffe Just became a turtle and catfish Ettouffe! I caught a 20 inch 6 pound Channel cat. this morning And it got chopped up into the mix as well. I cut the catfish into chunks and sauteed in olive oil with garlic Everglades fish and chicken seasoning and olive oil.

I can tell you this, my kitchen smells like a little slice of heaven!
