Open grilled cheese on toast topped with a poached egg is a special breakfast.

That is not a grilled cheese sandwich, that is a croque-monsieur and a croque-madame. They are also delicious. But you can't really pick them up and dip them in tomato soup, can you?

All this talk of grilled cheese led me to the kitchen for lunch today. I'm a fan of using what's available in the pantry, so today's grilled cheese morphed into this:

Bread was a week old hamburger bun that showed no signs of mold
Cheese was sharp cheddar
Meat was Oscar Myer Deli select Mesquite Turkey
A dab of Dijon country style mustard added some additional flavor
Avocado after it was all cooked

I used the bun "inside out" so that the inside white bread could brown. It was pretty dang tasty.

Wikipedia says a croque-monsieur has ham and béchamel sauce. Mine is just an open-face grilled cheese sandwich, if you like. I don't dip, but you can if you like.

I've been known to dip a croque monsieur. It's all in the pinky.

(Adding parm on the outside to my must-try list.)

croque-monsieur and grill cheese are the same.

You fill your sandwich with lots of stuff then when you're close to dip your croque-monsieur into your tomato soup everything falls down. What's left in your hand is cheese and bread everything else is floating in your soup. Here is your grilled cheese sandwich

I've used the heels of the bread loaf that way. Works great.

Butter, you have to use Butter, none of that fake stuff even if they say you can't tell the difference.

NO BUTTER-

Two slices of quality bread, your choice.
Kraft wrapped singles, one or two slices, your choice.
Most importantly- spread MAYO (Dukes of course) on the outside of the bread slices and heat on a well seasoned un-greased cast iron skillet at medium-low heat. Perfection every time.

I have a quesadilla maker that works great for grilled cheese.

i like honey wheat bread, and a mix of cheddar and mozzarella.

Yes, if you don't need something to wipe your hands on because of the butter there wasn't enough used.

You need at least as much butter (or margarine) as it takes to keep an acid-reflux stricken oldster up for several hours at night.

My Other Half has managed to burn a "cheese toastie", which I assume is the British equivalent of a grilled cheese... She's a one, sometimes.

If you ever ordered grilled cheese at a deli or grill restauant - this is what they use so get over it...

I'm a purist, sourdough, Kraft singles, grill with butter...but on occassion wouldn't turn down a tomato and avocado tp put inbetween...

What's tomato and avocado toilet paper? I'm not sure I want it with unless it's to wipe butter off my hands afterwards

safe word

rumrunn6 11-22-13 02:56 PM

open faced in the broiler with a slice of raw bacon. get the temp/distance correct and the bacon cooks just enough and the cheese melts without burning. since you are using a broiler you can make quite a few at a time
