A good first project?

Replacing the vertical dropouts in a no longer used frame with track dropouts and putting on canti bosses. I need a fixed gear bike that can accomodate full fenders. So how difficult are these jobs?

(I am signed up for a college night class in brazing and will probably get the Paterek Manual shortly after if survive the course.)
