Hybrid wheels vs. Road wheels
I have found a set of 700c hybrid wheel set on ebay for sale but what's the difference between these hybrid and regular road wheelsets? They are the same size. This wheelset is going to be going on a SS.

Different width rims to accomodate different tires (700 x 32c to 700 x 44c) whereas road rims accomodate (700 x 19c to 700 x 28c). These might not be accurate but, you probably won't be able to fit thin tires on a hybrid rim.
A usual road tire is 700 x 23c.

You can't fit wider hybrid rims between racing calipers.
700c rims come in all widths from narrow racing, medium for light touring/training, wider for touring/commuting and extra wide for I dont know what.
Each rim width can fit a range of tyres (roughly +- 5mm)

If they are built wheels for a hybrid, then the rear hub might well be 135mm spacing, which is common for mountain bikes but won't work on most road bikes.
