Just returned from Edinburgh, Scotland
It is a truly remarkable city -- charming, fun, and full of history; my wife and I had a brilliant time! However, when I compared it to my other favorite city, Copenhagen, it was lacking with more bicycle-friendly paths and lanes. I noted a number of residents cycling, but I felt their lanes weren't nearly as bike-friendly as what I saw in Denmark. I recognize that Copenhagen is a Mecca for cyclist, and naturally (or unfairly) compare other cities to that standard.
My wife, who wasn't a big fan of cycling before traveling to Denmark, absolutely LOVED Copenhagen because of that experience. She noted that the cycling made it one of her favorite places to visit. But, as we ventured around Edinburgh, she said she didn't feel comfortable cycling in the areas we spent most of our time, because cycling that close to the road didn't seem as safe.
That said, I fully recognize that I may have been in the wrong parts of the city, and maybe there were better bike lanes in other areas. And, we did see a few cyclists out and about in the beautiful countryside. In all, it's a tremendous place to visit, and I hope when I return they have made tremendous gains in bike-friendly options.

Edinburgh is quite hilly, too. I've never been to Copenhagen, but I'd guess it's pretty flat.
I was in Edinburgh this past June for a few days. It was congested enough with automobile traffic that I recall thinking I probably would not enjoy riding a bicycle there.

I’m heading to Edinburgh in another week for a 2 week stay. I’ve been there 3x before and rode around but didn’t get bothered by traffic. It’s better than NJ! Most drivers were very courteous to me. I stayed in just outside New Town.
I did a lot on Union Canal path.
We did Hadrians Wall in England. Very Nice.
