You can put any rack on any bike no matter if it has mounting eyelets
or not, mate. Go to your local hardware store, automotive parts store,
farm implement store and ask for a product called a "P" clip that is
vinyle covered. The clips look just like a "P" that are used to hold pipes,
tubes & wires in place on machinery. They come in a range of sizes so
pick one that isn't to big.

My rear rack recommendation for a carbon fiber seatpost with carbon fiber seatstays would be a Trek 520.

So you want to stay away from the chain stays, the lugs however I assume are made of aluminum.

It's posting #21.
I use waterproof panniers from Nashbar. They were cheap.

Jose:
How do you like the tubus rear adapter? The one that is fixed on through the skewer. I'm thinking of getting a Logo as well with the adapter kits.

I'm satisfied with this product. My only gripe is the removal of the rear wheel. You must remove the skewer, and somehow support the rack or remove it.
I purchased the rack from Peter White Cycles. He has all the parts you need to make it work as I've set it up on the Airborne.

For a light duty rear rack (the emphisis being on light) try a Detours rear rack. They are basicly a piece of metal that QRs' to a permenant stub mount on your seat post, the metal forms a rectangle and the bag hangs inside the metal. It is light weight and removes in a second, but you wouldn't want to put much weight in the bag.

Old Man Mountain makes racks that might be exactly what you're looking for. The top mounting points are at the V-brake arm mounting bolts. On the bottom they have models that go to rack mount holes on the dropouts if you have those, and models that mount to the quick release if you don't.
