For the first few minutes I always think, or should I say, try to remember if I locked the house or not. Then for the next few minutes I wonder about how the that particular days weather will have an effect on my ride.
During the middle of my ride I start thinking about how I feel about this ride, - am I making progress in my training and such.
During the final stages of my ride I start thinking about a nice refreshing shower, what did the missus cook for dinner, should I have a beer or not, is there beer or not...?
I enjoy having these somewhat trivial thoughts during my ride

Yesterday after Donna and I finished our 20 mile ride I asked her what she thought about while riding. Her responses were:

1 - "Not Sex" bummer for me
2 - The War in Iraq. We were riding around the perimeter of Robins AFB here in GA and during the ride we got to see KC-135 tankers doing touch and go landings WAY cool.
3 - Work.
4 - What's for lunch, I'm starving.
5 - Not letting this hill get the best of me.

I'll admit to occasionally having these exact thoughts when I arrive at the first climb of the morning because it arrives so quickly (before I'm ready). And, like you, my mood completely transforms by the time I reach the top. It works every single time.

Sometimes, I think d@mn, she is hot! Most of the time I am watching the road for glass, gravel, etc and I don't have time to think about anything else. That is why cycling is so mentally relaxing for me.

It's never any one specific thing, and I usually don't remember what I think about. It's almost like a dream, except I'm 100% concious. Odd.

I always think about problems of the day. Sometimes I even work out the problems when I think of them while I ride!

I usually think about racing with the top names and fighting to the end. Hey it keeps me really motivated. At least till I see my heart rate at 180 bpm.

Today as I descended a curvy modest hill at 45 mph for ~ 2 min I thought, "Man this if fun, but I am going to have to ride back up this bad boy".
