Hybrid Tires?

I have a Trek 930 SHX with the original off-road tires. I am considering a set of "around town" tires and rims for just that use, "around town". Is it too much bother and/or expense to do this or should I just buy another bike?

Maybe if you're switching them out all the time, but if you're going to be leaving the new tires on, I say go for it!

I changed out my tires and rims a looooooooong time ago, and now I ride around town and do long rides. It's the best thing I could have done for my bike.

Buying new rims and tires specifically for road use is a very good, practical idea. But if you find yourself changing every day, you might get sick of it very fast. Then a new bike sounds more appealing.
