Don't be afraid. Just line up the dots and pull straight up, and the blue part where the water comes out of will pop out for easy cleaning.
I have one of the Polar bottles and I love it. It works as advertised.

I like Polar bottles but I don't think I would use them for coffee. The plastic may not withstand the heat and it will probably not keep liquid hot that long anyway. Better to use a vacuum bottle for coffee.

Well now, I just had an interesting experience. I googled Polar Water bottles and found Teamestrogen. They had Polars web site. From there I fould an 800 number for the company that developed them and called them. Sorry Koffee, the bottles are definately not meant for hot coffee. Only for cold and freezing liquids.

Topeak makes an adjustable bottle cage that will fit a 1-litre or 1.5 litre soda or water bottle. A 3/4 frozen 1.5 litre bottle will stay cool a pretty long time, as the surface area is small relative to the volume. Not very aero, though...
