Shimano SPD M505

I've never had clipless pedals before, how do I release the clips to remove the temp. platforms that are installed?

It's difficult and sometimes you may be able to twist them off by hand but I've usually resorted to backing off the tension and then prying the jaws open with a screwdriver.

Yup, khuon is right.
You take a small flatblade screwdriver and wiggle it into one of the clamping jaws and slowly pry it out.
It helps to turn the screwdriver blade a bit as you pop it out...

Can't you clip into the other side that doesn't have the platforms?
