Help with measurements for a new road bike

Hey everyone! So, this is my first real post here and I hope you guys can help me out..

I'm in the market for a new road bike and intend to buy online and want to get your opinions on what the best size should be.

These are my measurements:

5'11 1/4" height
32.5" inseam
25 1/4" Torso length
26" arm length
Weight: 175lbs

I test rode a Trek 1.1 58cm and it felt really good, though I don't really have a preference as of yet.
I had borrowed my uncle's bike, which was way too small, for like a month..I loved riding it and expect to love riding even more with a bike that fits me.

The geometry chart for the Trek bike can be found here, and the geometry charts for the other bikes that I'm currently looking at can be found here for the Mercier and here for the Motobecane.

Side note: I know that many people have their opinions about BD bikes but let's save them for another thread if possible..

Unfortunately, the Mercier 58cm is sold out so I was thinking that if I went that route I would go with the 56cm if you guys think it would be an ok fit. Here are the links to the two bikes: 2010 Motobecane Record, 2010 Mercier Galaxy AL
I like the looks and price of the Mercier but they don't have it in 58cm and the steerer tube is only 1" so if the 56cm is just a tad too small then I have to get a shim in order to use a longer stem meant for the standard 1.125" steerer. And I don't like the idea of having to fish around for a 1" fork if I ever need to replace mine. But I guess all that isn't that big of a deal and I may simply not have the extra mony for the Motobecane.

Anyways, if any experts want to pipe in and let me know what you think the best size for me would be I would be much obliged..
