National Geographic did a story back in the early 70s about a group of cyclists who pedaled the then uncompleted Stewart Cassiar Highway.
My husband & I just watched a documentary at our local theater called, Reveal the Path. Here's more info: http://revealthepath.com/about/ which shows a trailer about a tour these guys took that brought them to Scotland, Switzerland's Alps, Morocco, Nepal, and Alaska.

You might like Race Across America, which is a documentary that follows an edition of the annual race by the same name.
If you want to read about bike tours (lots of pictures too), crazyguyonabike.com is chock full of journals from everywhere in the world imaginable.
Might as well add "Ride the Divide" which I found way more satisfying that the sequel and is about the Great Divide Mtn Bike Route.. (although technically, the movie was about the racers who raced the route)
Maybe Phil Keoghan's The Ride.
I watched Roam on amazon the other day, not too bad. I was wondering if anyone had a documentary about their cross country bike tour.
