Will a 700x28/32c tube work okay in a 700x33c tire?

I am new to cyclocross and my tire is a Maxxis Mud Wrestler sized 700x33c. My LBS carried tubes that didn't exactly match - 700x28/32 tubes. I bought two thinking they were close enough. Will they work okay or am I really increasing my chances of a flat?

They will work fine. I doubt you will increase your chance of a flat. The tire protects the tube... or should.

You should have no problems. I am running 700x32c tubes in 700x35c tires.

Yes, they will work fine. No, you won't have an increased chance of flats. 18/23mm tubes will work just as well without any appreciable increase in flats.

^^^^ This. I've been using 18/23 tubes (which I buy in bulk for my main rides) in the 27 x 1-1/4" tires on my beater for years.

Rubber stretches. One mm of stretch is probably less than the accuracy in the sizing of the tire OR the tube.

I think I pointed this out before but if the tube is a lot smaller than the tire, patches don't work very well because they reinforce something that needs to stretch. However it's not a problem for the OP.

I hear a lot of good things about latex tubes for cyclocross. You can run lower pressures with presumably lower pinch flats.
