New and interested in safety video cameras

Hi I just joined to learn about a few things. I want a recumbent bike to do some touring and will be looking into that and I have a daughter who commutes to work.
I am sure if I tell you she has many close calls it will not be a new thing.
To that end I started looking into video cameras but I do not find what I think is a logical answer. For me that is a system that can see each direction and either video it or take pictures at a rate of say one per second. Things don't just happen in front of you so I feel this is key.
I have not risen tons but have had some great trips, Vancouver to Green Lake with two small kids, Dad made it easy and we only rode the flats or down hills. Also Banff to Jasper. Great trip.
