Hi from NYC.
Hey there. Been lurking here for a bit thought I'd introduce myself. Moved for a better job from Boulder where basically everyone and their mom biked to NYC where... some people do. Looking for some solid rides around the area besides 9w/prospect/CP, any suggestions welcome (willing to drive a bit for nicer roads too).

Hi from New York!
One can take Metro North to Brewster and take Putnam Trailway/North County/South County trailway 50 miles back to Van Cortlandt park. The path is paved and car free. Not sure about the condition now, we may need to wait for the snow to melt completely.

Westchester County has been a cycling Mecca for decades. BITD - there were a large variety of rides starting from The Grand Concourse and Fordham Road, and heading north for loops running from 35-100+ miles.
These days you don't have to ride out of the city. You can get a $5.00 lifetime pass allowing you to take your bike on Metro North (subject to some restrictions. This is a great way to ride because with 3 lines, you don't have to close loops. For example, you can start in White Plains, work your way north among the reservoirs, then bend left and toward the Hudson, or right to Connecticut and Long Island Sound, for a train home.
Having lived and ridden in this area all my life, I can assure you that you can ride north of the city every weekend for years, and never repeat any ride. Add northern NJ, heading out toward Greenwood lake, and some interesting rides in Staten Island, and on Long Island, and you'll soon be deeply dismayed to find that there are so many rides and so little time.

Not by bike, you're not!!!!
However, he's close to an assortment of nice drive to ride destinations, and if you ask nicely, might let you park in his driveway while you explore the Catskills for a 3-4 day weekend.

As far as riding in the Catskills, that's where I live and ride. Climbing is inevitable so I adapted and got used to it.
