planning on touring southern CA

My husband and I are taking our first bicycle tour next year. We have chosen southern California from Imperial Beach to Santa Barbara. We are following the path laid out by Adventure Cycling Association in their touring map but I would like to know about cheap accommodations or campgrounds. Has anyone tried just finding a place off the beaten path to stake a tent in southern CA?
