278km Charity Ride - nutrition week of event

I have a 278km (172mi) charity ride on the first weekend of August. It's not a race, just a ride, although I know parts of it will turn to a race. I thought it was quite far until I see some of the distances posted here. Well done everyone. Nevertheless, it's quite a big ride for me - did 175km last year and my day was ended by my second flat. This year I'm logging some decent miles and should be more than ready from that point of view. I was wondering about what to eat the week before the event and the day of the event.
Thanks,

Heres a handy little article. Really all the articles on that site could be rather handy.
