Tubeless Rim-Non Tubeless Tire
I have Mavic CrossMax rims (UST). Can I mount a non-tubeless tire (Maxxis Larsen TT) on this rim and not have to worry about it coming off the rim at speed?

You will be fine.
What version of crossmax do you have? sl, xl,
from MAvics website.
"COMPATIBILITY
Cog: HG 8 and 9 speed
Suggested tire: from 1,00 to 2,3
UST Tubeless or regular tires with inner tubes
With regular tires and inner tubes, do not use any rim tape"
you could possibly try running a 'tubeless' setup with regular tireson the UST rims. Thats where a stans kit would be involved. I think if I was racing I would try that.
