Rucksack or Panniers?
What do you recommend for middle distance rides of about 15miles with mainly road work but a 2 mile off road hill climb (and then decent)? I was thinking of using my front pannier bags on the rear rack or a rucksack(that way I can use a hydration system)...
I'm only looking to need to move about 15-20 litres of gear.

I only use a daysac for short rides. Over that distance, a pannier bag will be more comfortable. You can use just one pannier bag on a bike, it wont cause any balance problems.
If you are riding in Scotland, dehydration is not going to be a major concern, like it would in a desert.

I find I can't ride far with a rucksack before I find it uncomfortable so run (a)smallish rear pannier(s). Off-road panniers have the advantage of predictable weighting, a rucksack flexible weighting...
