Custom Wheels Question

I'm building up a wheelset for my Big Dummy that will also act as back-up XC rims if I ever needed them. I was going to go with one of the pre-built wheels available at the Jenson/Chain Reaction/PricePoint places but in the end decided to give the custom built option at Chain Reaction Cycles a whirl.

I like Chain Reaction Cycles because shipping is free after hitting a certain price on the order and they ship without using UPS or Fedex (A good thing for Canadians).

Anyway, I settled on the following and have a question:

Shimano XT Disc Hubs (M756)
Mavic XM719 Rims (thanks for the tip, gastro. I opted for Mavics)
DT Swiss Spokes Competition Stainless DB (2mm-1.8mm)
Velox Rim Tape

How does that sound? Any thoughts on the above choices?

My specific question is on the rim tape width. According to the Mavic web site the recommended rim tape size is 559 x 20 x 0.6, which I presume means 20mm width. My choices are 17mm, 19mm, and 22mm. Should I be selecting the 19mm rim tape?

Dimensions are length x width x thickness. I'd go 19; you just have to cover the nipple heads and 22 may foul with the tire bead.

I was actually curious about the spokes as well. I ha a choice of 2mm, 2-1.8mm and 2-1.5mm spokes. What are the benefits of going with the 2-1.8mm vs. 2mm all the way. Is it just a weight thing or is there an actual benefit on how the wheel feels?
