Wow, that's a lot to cover in one topic! Here's a quick rundown from one of the mountain bike sites I frequent, as well as example dimensions from a really nice track that flows very well that they have set up at a shop in Boulder: https://www.leelikesbikes.com/build-y...ump-track.html
There's also a "How to" e-book you can buy from that site, though I haven't bought or read it, so I can't personally vouch for it.
It may also be worth it to see if you can find some old carpet scraps to throw over the rollers when it's raining. Seems to help them pack better and not erode as much. You can ride it a few times with the carpets too to help pack everything down.
