Westminster to Ft. Collins, CO Route?

I'm thinking of taking advantage of the (relatively) warm weather on Saturday and attempting my 1st century ride from Westminster to Ft. Collins and back. What would be the best/safest/most interesting way to get there? Is 287 safe to ride all the way?
