New Hope/ Lambertville to Lawrenceville (Hills, hills, hills)
East Windsor to New Hope (traffic thins out after the first few miles)
Princeton to Washington Crossing loop

Don't forget the D&RC towpath.

Take a look at my routes and Dustin's NJ Bike Map pages (major excellent work!). You can then take bits and pieces and build your own routes. Just ask and folks will help. Don't be afraid of the mileage on my routes (they're long) just use the bits and pieces to build your own routes on something like http://www.bikely.com/. In fact just do a search of Bikely to find existing routes.

And search on mapmyride and motionbased for towns in the areas you want to ride in.
