I haven't been to the big island but will soon. But I've ridden on Maui and elected not to ride on Kauai. Maui is considered the best for bike riding as they even have paved trails on stretches through the island. But the problem you get into is most the roads aren't designed really to share the road with bikers and there aren't a lot of roads. The ones that do exist usually circumnavigate the island and are loaded with cars with poor visibility as they hug the coastline. For instance, Maui has a drive around the Hana coast that will take you 2.5 hours to go about 50 miles by car. It's very windy, is loaded with one way bridges that must be shared, and quite hilly. It can be done but I wish you luck.
