New Bike Day! Help me decide on wheels

I recently completed a Haanjo Carbon Comp build. Its meant to be a backup road bike, gravel machine, touring bike, do-it-all. I stripped off the 105 and replaced with SRAM Force HRD. The Vision wheel set on the bike is going to become my road wheels once I upgrade that frame to Disc. I am looking to build up a durable but lightweight set of regular Gravel/Trail/Commute wheels and I am strongly considering the following:
DT Swiss 350 Hubs (Need 12x100 and 12x142 axle widths)
27.5" - Stans Crest (i23) or WTB Frequency (i23) or Velocity Blunt SS (26 too big?) Looking for suggestions here.

Relevant info: I am about 205 lbs. My trail riding could consist of mountain trails and fire roads in Central Coast California.
Finally, any wheel builder suggestions?

Stay away from the Blunts. They wont cut it for hard gravel riding. I like the Mavic 927 wheels. I have 2 sets and they are absolutely indestructible. Some d-butted spokes and you are set.

Curious what size crankset/rings you went with...looks like a 50t big ring. Any issues with clearance? How about the inner?
Looking at picking up a Haanjo Comp or Exp and would want to switch out the crank to a compact if it'd fit. Thanks!

I'm running the WTB Frequency i23 rims with Byways on my Cosmic Stallion. Nothing but good things to say about the rims or the tires. BTW, those ugly stickers peel right off with no trouble.
